For 27 years the Republic of the Rio Grande has been where McAllen books the birthday, the graduation dinner and the Friday that turns into Saturday. The draw is the covered patio — brick, string lights, a fire feature and, on most weekends, live music — attached to a dining room and cantina that carry the same Rio Grande-flavored hospitality.

The kitchen is fire-crafted and broad: grilled ribeye with shishito peppers, the Texas filet in port mushroom sauce, chimichurri steak salad, avocado chicken under queso and pico, grilled avocado salmon, an ahi tuna ceviche tower, chicken fried steak, and a brick oven turning out Margherita, wild mushroom and avocado-topped pizzas on Republic-stamped pans. Desserts (ice cream taco, bread pudding, key lime) are a local ritual; the cantina mixes pomegranate cocktails, sangria and house mixers with Valley flavors.

TripAdvisor ranks it in McAllen's top ten and it holds a Travelers' Choice award. Doors open at 11 AM Monday through Saturday and stay open until 1 AM on Friday and Saturday, so it covers lunch, pre-show dinner and the after-party from one address.
