Larry and Jessica Delgado moved to McAllen in 2008 to prove that extraordinary food belongs in the Valley. They opened house. wine. & bistro. first, then in 2013 launched SALT — New American Table in a brick-walled room on North Main Street with the kitchen in full view and a Chef's Bar for anyone who wants to watch it work.

Larry cooked with his mother before he learned to farm, and the menu still starts with what grows nearby: Deep South Texas traditions run through French, Mexican, Asian and Italian technique. Burrata alla panna, a charcuterie board, magret de canard, fish tacos, buttermilk fried chicken with a charred jalapeño, a peppercorn NY strip, ribeye, house-made mac and cheese — and the torched Baked Alaska that half of the Google reviews mention by name. Jessica's wine and hospitality background shows in the list, the Distiller's Club wine dinners and the happy-hour pitchers.

Hours are focused — dinner Monday through Saturday, 5 to 9 PM — so book ahead, especially before a downtown show. Private events, takeout and delivery are all available, and the Delgados remain two of the most visible names in Valley hospitality.
