In 1974 Don César Pavlovich Sugich opened the first Palominos in Hermosillo — the first restaurant of its kind in the state of Sonora, built around a family table and the region's carne asada. Five decades and eleven Mexican locations later (Hermosillo, Mexicali, Tijuana, Chihuahua, Culiacán, Mexico City and Guadalajara), the family brought the concept across the border to McAllen, its first U.S. restaurant, on West Expressway 83.

The food is northern Mexican ranch cooking done with steakhouse discipline: mesquite-grilled ribeye, the Black Onyx, ribeye aguachile, grilled panela cheese, tuna tostadas, octopus and the house icon, Filete a la Bacanora, finished with Sonora's agave spirit. The 'Paquete Palominos' still honors the cattle ranchers who built the region's cuisine, and the bar leans on carajillos and a mixology list that regulars rate as highly as the meat.

There are indoor tables, an outdoor terrace and private rooms for birthdays, business dinners and family celebrations, and the doors open at noon every day — so it works as easily for a long Sunday lunch as for a pre-show dinner on the way to Payne Arena.
