Mikhuna brought Nikkei cooking — the Japanese-Peruvian cuisine born in Lima's immigrant kitchens — to the Rio Grande Valley, and it did it in a room that looks like nowhere else in McAllen: moss-green walls, a wall-length mural of a geisha over the Andes, and an arched back bar stacked with pisco and Japanese whisky on North Main Street.

The menu moves between indigenous Peruvian recipes, Japanese-influenced Nikkei plates and the modern street food of Lima. Ceviche Peruano and tiradito arrive in leche de tigre; Nikkei rolls come crowned with crispy sweet potato; anticuchos, lomo and tallarín saltado, tacu tacu with a fried egg and seafood rice cover the grill and the pan; conchitas a la parmesana and acevichado crab tostones are the starters regulars mention first. Pisco sours, sake cocktails and a short list of wine and beer round it out.
